Abstract:
In order to understand the nutritional value and functional properties of
Dendropanax dentiger, nutrients such as protein and functional substances such as flavonoids were determined and analyzed. The results showed that the water content of edible young leaves and adult old leaves were 82.7% and 73.7%, respectively, and the dry-fresh ratios were 1∶5.78 and 1∶3.80, respectively. Counted as fresh leaves, the crude protein contents were 4.24 and 2.76 g·100 g
−1, the crude fat contents were 0.38 and 0.72 g·100 g
−1, the total soluble sugar contents were 12.17 and 25.38 mg·g
